Courses in the Christmas feast of Korvatunturi
In Korvatunturi the Christmas feast is started with spiced fish. There are so-called Glazier’s herring and Mustard-herring in big pots. Every year Mrs Santa has some novelty, this year it is delicious fish aspic. With it you must have root crop - apple -salad, and a thick slice of sweet Christmas loaf.
The culmination is, of course, the juicy Christmas ham, but besides the ham there is salmon stuffed with pike and morel.
What else? The elves love carrot-casserole, turnip-casserole and liver-casserole. But best of all is potato-casserole. Its crisp crust is especially wanted. As a drink they have home-brewed beer, that extinguishes your thirst better than anything in the world. As their dessert the elves have homecheese-bread that creaks in your teeth. With it they have summery cloudberries , that always can be found from Mrs Santas cellar. Finally they drink a cup or two of strong, good coffee, with sweet gingerbreads and slices of a rich fruit cake.
